By Geoffrey Cook Did you know that the turkey you thawed on the kitchen counter, instead of in the fridge, could now contain bacteria levels high enough to harm human life, even though you cant see, smell, or taste it? Theres nothing better than a home cooked meal during the holidays. But, with all the special effort that goes into making one, everything will be for naught if the food has not been stored, prepared, or cooked properly. Food experts agree that the safe handling of food should be the top ingredient in any recipe. While they may not turn you into a gourmet chef, following these simple food-handling tips will keep your family and guests safe from unpleasant, and sometimes life-threatening, food-born illnesses. When buying raw meat, keep juices, which may contain bacteria, from contaminating your hands or anything in your grocery cart. Plastic bags work great for this purpose. Meat should also be picked up at the end of your grocery shopping and should not be placed in the same bag as fruits and vegetable. If you plan on storing your meat for 2 to 3 months in the freezer, make sure you buy some freezer proof wrap. The wrap that the store uses is designed to allow air into the meat product and is, therefore, not good for freezing. This is because beef products turn from a purple color to a bright red when exposed to air, making them look fresh, but if left too long will promote bacteria growth. Defrosting should be done in the refrigerator or in a sink full of water, changing the water about every 45 minutes. A refrigerator allows the meat to defrost in a controlled atmosphere, slowing down the growth of bacteria. Never defrost your meat on top of the counter at room temperature. This can quickly become a bacteria breeding ground. The growth rate of bacteria multiplies rapidly between 40F (4C) and 140F (60C). Once meat has been thawed it must be either cooked immediately or placed in the refrigerator and then cooked within 24 hours. Never refreeze meat. Most meats and poultries only have a safe fridge life of 2 days, whether stored after thawing or purchased fresh. When handling raw meat, wash your hands before and after. Also, wash counters or plates you plan to reuse in the preparation process if they have had raw meat on them, as they will also contain harmful levels of bacteria. As humans, we also carry harmful organisms on our skin which, when spread to food, produce a toxin that normal cooking cannot destroy. Therefore, it is essential to wash our hands thoroughly with soap and water prior to handling food, as well as cover open cuts. While beefsteak can be cooked to varying degrees of redness, turkey must be completely cooked. At the innermost part of the thigh, the temperature must reach 180F (82C) for a stuffed turkey and 170F (77C) unstuffed. Stuffing in the cavity should read 165F (74C). Cooking times vary with the weight of the bird. It is important not to keep the thermometer inside the oven with the bird as it could be affected by the ovens hot air and provide a false reading. Plan your cooking ahead of time. Do not partially cook the bird, refrigerate, and then complete the cooking process, as this will produce dangerously high levels of bacteria. Cooked food must be refrigerated within 2 hours, which means that you need to plan your meal so that it can be eaten shortly after being cooked. Refrigerated leftovers should be eaten within a couple of days, which includes turkey gravy, fish, and eggs. Meat casseroles and pies, rice, potatoes, and cooked noodles will last 2 to 3 days, while cooked meat, chicken, turkey, turkey stuffing, and many soups may last up to 4 days before bacteria levels reach critical points. Work Place Injury in Virginia: Can You Sue Your Employer for Your Injury?

By Jerry Lutkenhaus The Virginia Workers’ Compensation Law was adopted in 1918. The law provides compensation for lost wages and medical benefits. The common law right to sue the employer for the work place injuries in Virginia was abolished. However, the employer lost the right to defend the accident on the basis of the workers contributory negligence or assumption of risk. Also, the worker did not have to prove the employers negligence caused his injury. As noted by the Virginia Supreme Court in Feitig v. Chalkey, 185 Va. 96 (1946), the principles of the Virginia Workers Compensation Law have been accepted by practically all of the States in the United States. The principle restriction on recovery in a workers compensation case is that you cannot recover pain and suffering as you can in a personal injury case. The principle benefit may be a speedier but smaller recovery without resorting to costly litigation. Of course, if the injury results from the actions of a third party, the worker can file a personal injury action against the third party provided the third party is not a co-employee. The usual example of this is if the worker is driving a company vehicle which is negligently struck by a driver of another vehicle. In this situation, the worker would have a workers compensation claim against his employer and a personal injury claim against the driver of the other vehicle. Also, if the injury was caused by defective equipment, then the worker could sue the manufacturer of the machine and workers compensation would not be a bar to this kind of product liability lawsuit. The only response I can make is that the State of Virginia in 1918 like the other States in the United States at about this time decided that industry and labor were better served if employers were required to provide workers compensation insurance as a cost of doing business rather than the worker having to rely on the uncertainty of personal injury lawsuits. This year it is your job to get your spouse something to do with original poetry. No, this doesn’t mean that you get out a napkin and scribble some cheap limerick on it. This is the time for you to come up with some lovely words of love to give to your lifelong partner, for better of for worse. Gardening - Fill Your Cottage Gardens With Free Plants!

By Pearl Sanborn I love to dream - and one of the things that I love to dream about is my cottage garden.I pull out back issues of my favorite magazines, gardening books, and seed catalogues to add to the plethora of ideas already stored in my minds eye. There is one small problem however. When you start shopping at the garden centers & from all of the plant catalogues, you start to see a growing trend - all of these beautiful plants add up to lots of money! I need to be honest with you for a second. You see, Im not really good at waiting several years to add a plant here & a plant there to my garden. Im the kind of person who sees something beautiful, then tries to find a way to make it happen in my own garden. Sometimes the ideas work out wonderfully, and sometimes I learn a lesson from the whole process. In any case, my garden is always better because of it. We all live such busy lives, and we do our best to have our obligations taken care of. Sometimes, despite all of our work & effort, we just dont have the extra amount of money that it would take to have the garden of our dreams. I know that feeling personally, and thats why I wanted to take this time to share with you some of the ideas that I have discovered for finding free plants over the years. Soon, with a little bit of creative thinking, youll have to start giving plants away due to lack of any more space in your garden! - Weekly Clean Up In our village, the city trucks come around & pick up yard debris that is set out for pick up. Youd be surprised at how many plants are put out to the curb! Im still not sure of the reason? Could be a change in color scheme, or perhaps they just got tired of taking care of it? In any case, Ive found many nice plants just by collecting them before the debris truck does! - Cuttings Either from your own plants or from your friend’s, small clippings add up to lots of free mature plants! I know one gal who offers to tidy up the gardens in her neighborhood in exchange for the clippings and extra plants that she cleans up. Most plants will grow from cuttings, and a small section a few inches long is all you need! Just cut a small piece of the stem of most any plant - pull off all but the top few leaves - insert it into some moist sand. In no time you’ll have roots & a free plant! Mint, tomatoes, roses, hydrangeas, holly, and butterfly bush are all examples of plants that will grow from cuttings. - Discards From Stores Become friends with the person in charge of your local flower department in the big super centers! When plants get a little tired looking, they may give them to you free! All you need to do is give the plants some TLC! Example: Recently in our local grocery super center, they were selling spring bulbs. In a short while the flowers had faded & the plants were no longer wanted by shoppers. Most folks have no idea that these plants can be planted outside for spring flowers next year! Just ask if you can have the “old” flower pots after the flowers fade! *Keep your eyes open for Easter lilies, outside they can grow up to 4 ft. with lots more blooms than you see in that little pot! * My poinsettia is also still doing great from Christmas! I pinch back the stems as the red flowers (actually leaves) dry out. New beautiful sets of leaves bud have budded out already! I will plant it outside as soon as the danger of frost is past, then bring it in for a new round of Christmas blooms. I also broke off a few of the longer stems & stuck them down in the soil. They have already grown roots! I know everyone throws out their poinsettia plants after Christmas, but when I went to Africa some years back, one of the most amazing memories I have were the huge poinsettia TREES!!! So I am going to see how far I can take this little beauty ;) - Restaurants & Parks Most businesses replace their plants as the flowers fade. This year, start a relationship with the businesses in your area. It seems like I always get sick when things are going well for me. Is there a metaphor behind a health ailment? Most of the time our bodies will give us a fair warning that we need to slow down. Catching the common cold or experiencing a headache could be our first warning. We treat it like a false alarm pop a few pills, and go on with our lives as if we were invincible. Some will argue that their sickness happened overnight or out of the blue. While this might be true for a few, most of us live our lives with inescapable stress and compromise our immune systems so we are more susceptible to sickness and diseases. Many people will go to the doctor frequently and never examine their diet, stressload or psychological make-up. There are a lot of us who are always sick and will blame our parents genetic coding for our health problems. Understanding, accepting, and being responsible for our own health are the only ways to control our own wellness and mortality.
